Healthy American Pancakes

Healthy American Pancakes (makes 6)

This was obtained from the BBC GoodFood website and it has been edited to suit one's preference.

 Ingredients

  • 135g plain flour
  • 1tsp sugar
  • 1tsp baking powder
  • 1tsp butter
  • 1 large egg
  • 130 ml milk
  • pinch of salt

Method

1.Pour all the dry ingredients (flour, sugar, baking powder, salt) into a large bowl and mix.
2. In a jug, measure the milk. Add the egg into the milk and whisk the egg using a fork.
3. Melt the butter in the microwave using a microwave-proof container and let the butter cool.
4. Once the butter has cooled, add it to the egg-milk mixture in the jug and stir
5. A little at a time, pour the egg-milk-butter mixture into the large bowl and stir using a whisk or wooden spoon (it may seem thick but this is how it is supposed to be).
7. Using a kitchen towel, spread the butter and oil across the pan and wait for the pan to heat up (medium heat)
8. Use a ladle to spoon your mixture (halfway in your ladle) and gently pour into the centre of the pan (unless you have a big pan you can cook 2 pancakes in one go).
9. Once you start seeing bubbles, flip to the other side and cook.
10. Repeat above steps for the rest of the pancakes.
